Description

This Pineapple Casserole is a sweet and savory Southern classic that pairs juicy pineapple, sharp cheddar cheese, and a crispy butter cracker topping. It’s the perfect side dish for holiday dinners, BBQs, and family gatherings. Easy to make and always a crowd-pleaser!

Ingredients

Scale
  • 2 cans (20 oz each) pineapple chunks, drained
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 1 sleeve (about 30) Ritz crackers, crushed
  • 1/2 cup unsalted butter, melted

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  • Mix the pineapple base: In a large bowl, combine drained pineapple, sugar, and flour. Stir well and pour into the prepared dish.
  • Add cheese layer: Sprinkle shredded cheddar evenly over the pineapple mixture.
  • Prepare the topping: In a separate bowl, mix crushed Ritz crackers with melted butter until evenly coated.
  • Assemble & bake: Spread the cracker topping over the cheese layer. Bake for 25-30 minutes, or until golden brown and bubbly.
  • Serve warm: Let the casserole cool for 5 minutes before serving.

Notes

  • Fresh Pineapple Alternative: If using fresh pineapple, dice it into small chunks and pat dry before mixing.
  • Gluten-Free Option: Use gluten-free crackers instead of Ritz.
  • Make Ahead: Assemble the casserole, cover, and refrigerate for up to 24 hours before baking.
  • Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat at 350°F for 10-15 minutes.
