Ingredients
Scale
- 2 cans (20 oz each) pineapple chunks, drained
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup granulated sugar
- 3 tbsp all-purpose flour
- 1 sleeve (about 30) Ritz crackers, crushed
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- Mix the pineapple base: In a large bowl, combine drained pineapple, sugar, and flour. Stir well and pour into the prepared dish.
- Add cheese layer: Sprinkle shredded cheddar evenly over the pineapple mixture.
- Prepare the topping: In a separate bowl, mix crushed Ritz crackers with melted butter until evenly coated.
- Assemble & bake: Spread the cracker topping over the cheese layer. Bake for 25-30 minutes, or until golden brown and bubbly.
- Serve warm: Let the casserole cool for 5 minutes before serving.
Notes
- Fresh Pineapple Alternative: If using fresh pineapple, dice it into small chunks and pat dry before mixing.
- Gluten-Free Option: Use gluten-free crackers instead of Ritz.
- Make Ahead: Assemble the casserole, cover, and refrigerate for up to 24 hours before baking.
- Storage: Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat at 350°F for 10-15 minutes.
